Lady Bug Says ... Gluten Free Scones

Evening lovelies!

Anyone else get cravings for food that literally will not go away until you eat said food?! At the weekend I knew the only sweet treat I wanted was a good old Devon cream tea, so I took myself off to my go to recipe website, Good To Know Recipes, for a gluten free version.

They were so tasty and pretty quick to make, meaning they could be eaten even sooner!

Lady Bug Says ... Gluten Free Banana & Chocolate Muffins

Evening Lovelies.

I thought I would share with you a super yummy recipe today. Since changing to a wheat free diet I have been testing lots of baking recipes out to see if they are just as yummy made with wheat free substitutes.

This has to be one of my favourites, adapted from this recipe

Ingredients
200g Dove's Farm Plain Gluten Free Flour
1/2 teaspoon Dove's Farm Gluten Free Baking Powder
1 teaspoon Dove's Farm Gluten Free Bicarbonate of Soda
1/2 teaspoon Salt
3 Large Mashed Bananas
150g Caster Sugar
1 Egg
75g Melted Butter
75g Chocolate Chips or Chocolate Chunks

Method
1. Preheat oven to 180 degrees Celsius and line a baking tray with 12 muffin cases
2. Sift together flour, bicarbonate of soda, baking powder and salt
3. Combine bananas, egg, sugar and melted butter in a bowl. Add the sieved dry ingredients and mix until smooth.
4. Mix in the chocolate chunks
5. Spoon into the muffin cases and bake for 25-30 mins or until golden.
They are my favourite breakfast treat at the moment :)

Lady Bug Says ... A Foody Post



Evening Ladies!


Hope you have all had a lovely weekend, mine has largely been food and dress making (so proud of myself, next post on this!) filled.


On Thursday one of the guys at work retired so we finished early and had a bbq :) Thankfully the rain stopped for the few hours we were outside! As has become a tradition at work whenever there is a special occasion, I bake cakes! Having seen this idea for Oreo Stuffed Cupcakes I knew I had to make them! They turned out even yummier than I imagined, biscuit and cake combined in one, whats not to like! I used my fool proof sponge recipe and sandwiched an Oreo cookie in between 2 dollops of cake mix. I finished them off with cream cheese icing but the recipe I used was really runny :S Anyone got a recipe for a less runny, more pipeable one?!


On Saturday the Mr and I went on our first date day :) We realised that since we bought our house we have spent the majority of our time together doing DIY/gardening/house stuff and hadn't actually done anything like go out for a meal or to the cinema just the 2 of us. So we are going to take it in turns to organise dates for each other every now and then, the Mr is taking me to the circus next week, beyond excited!!!


I managed to snap up a voucher on Groupon for a restaurant near us so we went for a lovely lunch then a wander around the antiques centre and farm shop :) Lovely afternoon out!

Pan Fried Free Range Chicken With Chorizo & Wholegrain Mustard Mash


Hands down best scallops I have ever tasted! Plus the chicken was a piece of melt in the mouth, moist amazingness! We will definitely be revisiting :)
